Ingredients

3 The Greater Knead Tomato Basil Bagels

¾ cup vegan or regular mozzarella, sliced or shredded
-
6 eggs
-
1 ½ cups baby tomatoes, sliced
-
salt and pepper
-
fresh basil, chopped
Directions
Preheat your oven to 350 degrees F.
Microwave the bagels for 60 seconds.
Grease a baking dish and add the bagels upside down.
Crack the eggs on top of the holes. They might spill over the sides, but that’s ok.
Top with the mozzarella and tomatoes, sprinkle with salt and pepper.
Bake for 12-17 minutes.
Sprinkle fresh basil on top and serve!
