Easy Gluten & Dairy Free Beer Cheese

This Vegan Beer Cheese is a creamy, rich dip that’s perfect for pairing with pretzels, veggies, or bagel slices. Ingredients

2 tbsp vegan butter

2 ½ tbsp gluten free all purpose flour

8 oz. vegan cream cheese

1 cup unsweetened coconut milk

¼ cup nutritional yeast

½ cup gluten free light beer

1 ⅓ cup vegan cheddar cheese

1 tsp granulated garlic
-
½ tsp sea salt
-
¼ tsp turmeric
-
¼ tsp paprika
Directions
In a medium size saucepan add the butter and cream cheese. Turn on medium heat and begin to melt them together, stirring constantly. Sprinkle in the flour and allow it to dissolve into the mixture.
Add the beer slowly while still stirring and then add the milk. Once the liquids are incorporated add the nutritional yeast and the seasonings. Keep stirring and add the cheese.
Bring to a slight simmer and at this point it should begin to thicken while the cheese is melting.
Stir constantly, once the cheese has melted and the dip is thickened to a nacho cheese consistency it is done. This takes about 5 minutes. Serve hot!

Our favorite beers are Ghost Fish and Holidaily, but any light gluten free beer will work in this recipe.
